Quick and Easy Vegan French Toast

It’s Tuesday, and what better way to enjoy the start to your day than with some delicious french toast! French toast is an all time favourite breakfast or brunch treat. Even though the name sounds super fancy-shmancy, it’s the easiest thing to make! Even if you’re not vegan, this french toast is just such a DELICIOUS change of flavour to the usual eggs and milk, it tastes extra creamy and so so good! And it’s all made with wholesome, natural ingredients. All you need is simple 5 ingredients, so get ready to take your taste buds on a journey!

I usually like to top my french toast with a drizzle of honey and some fresh berries from the farmers’ market! I like to shop for fruits and veggies at the farmers’ market because I feel it’s just super fresh and it always tastes extra good too.

In order to get that crispy and golden brown colour on your bread, make sure you put your pan on medium heat. Be sure to soak your bread in the batter for at least 10 seconds! Make sure it’s saturated in the batter before you place it on the pan, or else it’ll end up dry inside. Oh no! A few of my pieces ended up that way. But nonetheless, it was still so delicious. I used bakery white loaf for this recipe, because I really wanted good tasting bread. You can use any other type of bread if you like.

Ingredients
  1. 4 slices wholemeal bread
  2. 1 cup coconut milk
  3. 1/2 tsp cinnamon
  4. 1/2 tsp vanilla
  5. 1/2 tbsp agave syrup
  6. 1 banana mashed
Instructions
  1. Mix all ingredients in a large bowl.
  2. Heat pan to medium heat with 1 tsp of coconut oil.
  3. Dip a slice of bread in the batter for at least 15 seconds, making sure the mixture is soaked in.
  4. Place the slice on the pan and cook on either side until golden brown.
  5. Top with desired toppings: I went with honey, blackberries and blueberries.
